Last but definitely not least is Tania Vorrath who owned The Strictly Coffee Company and Diesoline Café in Dunedin, New Zealand. It’s safe to say she’s my role model. But then all these people are amazing, you know!?
Name some collaborations you did that were close to your heart.
I really like collaborating with people that share my vision. I’m also trying to get specialty coffee out there to a broader audience because it’s still very much a niche market; 99% of people are still drinking bad coffee and don’t even know they can do better. This is why my collaboration with the Roastery Department began.
Everything I do is closely linked to head roaster Dumo Mathema because I feel I can really trust him to tell me the truth- “can we serve this? is it too sour?”, things like that.
I wanted my coffee to be for both experienced and inexperienced baristas: easy to use at home and in cafés alike. I was stoked when I heard a café in Nottingham had bought my coffee! I’d love to see it in more places over time, of course, but it was such wonderful news, it had that “aww, they thought it was great” – feeling.
I’ve also done other projects like the one with MRstudio London where we had a limited number of postcards that said Coffee Bloom made from pressed flowers, or the hand painted ceramic V60s that I did with Lauren van Uden from StudioLVU that you could buy from my web shop or from Soho Bikes.
Do you have any words of wisdom for the Barista community in Romania?
I’d have to say: Start to consciously use all of your senses. This will help you know the coffee you’re using and will eventually teach you about consistency. But most of all: cup tasting!
