
Ce părere aveţi despre competiţiile de barista? Sunt folositoare industriei?
Kim: Da, cred cu tărie că acestea sunt importante şi că merită susţinerea şi valorificarea din perspectiva companiei. Ei evoluează mult în timp ce se pregătesc pentru competiţie şi cred că asta îi ajută mai mult să înveţe decât competiţia în sine. Nu cred că acestea sunt pentru oricine, eu de exemplu, urăsc să concurez şi am trac pe scenă.
Matt: Am concurat la WBC Viena reprezentând EAU şi sunt de acord cu Kim, trainingul, pregătirea, cât de departe mergi pentru a înţelege cafeaua şi toate variabilele contează. Nu am fost mulţumit de reprezentaţia mea, dar a fost sigur o experienţă valoroasă. Noi susţinem oamenii să participe la competiţii, îi lăsăm să îşi aleagă cafelele, să îşi formeze programele şi signature drinks, totul trebuie să vină de la ei şi să-şi exprime personalitatea.
Aveţi alte proiecte în viitor?
Kim & Matt: Avem multe în plan la care lucrăm de ceva vreme. Vom lansa un nou sub-brand de micro loturi în ediţie limitată, aşa că am primit primele noastre unsprezece cafele noi. Am terminat logo-ul nou, conceptul de ambalaj şi site-ul va fi şi el gata curând, aşa că urmăriţi pagina de Facebook Raw Coffee Company pentru a vedea când apare online. Vom lansa o aplicaţie care e făcută să apropie barista de consumator, să scoată în evidență meseria de barista şi pentru a promova cafenelele care lucrează cu noi. Vrem să vedem că barista primesc recunoaştere şi credem că aplicaţia va ajuta la creşterea calităţii cafelei şi la crearea unei comunităţi mai autentice de cafea. În legătură cu asta, amândoi tocmai am obţinut Diplomele SCAE, iar Drew, managerul nostru Ops, a creat cele mai bune manuale de training pe care le-am văzut, aşa că vrem să îmbunătăţim educaţia echipei noastre, a clienţilor şi consumatorilor interesaţi. Tocmai am terminat construirea primului nostru food truck; e un Chevy de aproape 10 metri cu o staţie dublă La Marzocco şi râşnite Mythos, care poate servi volume mari de cafea. Urmează să construim două tuk-tuk şi căutăm un truck pentru cafea de mărimi medii care să fie potrivit pentru evenimentele unde nu încape camionul mare. Aceste soluţii de mobilitate sunt o cale fantastică de a face reclamă cafelei noastre şi pentru a ne distra.
În final, spuneţi-ne câteva cuvinte de înţelepciune pentru comunitatea noastră de iubitori de cafea.
Kim: Cum am spus mai devreme, nu pot să cred că am avut curaj să intru în industria de cafea, asta s-a întâmplat doar pentru nu ştiam ce presupune. Acum, după 9 ani, îmi place să cred că totul este despre oamenii pe care i-am întâlnit prin lume, pe care acum îi numesc prieteni, despre toate lucrurile rămase de învăţat şi despre cafeaua minunată. Că prăjitor, sper că ştiu îndeajuns încât să pot capta potenţialul cafelei pentru a-l pasa către barista, ca aceştia să închidă lanţul… atât de multe mâini şi variabile de controlat.
Matt: Ignoraţi răutăţile, concentraţi-vă pe cafea. Ignoraţi politica şi criticile; concentraţi-vă pe învăţat, pe a face totul pentru a înţelege cafeaua şi procesele. Dacă nu sunteţi buni la un aspect al afacerii, angajaţi pe cineva care este mai bun şi daţi-i putere.

What do you think about barista competitions? Are they useful for the industry?
Kim: Yes, I completely think competitions are important and really worth the support and value to our team from a company perspective. It is more the preparation for the competition that baristas go through that I personally believe helps them to learn and grow rather than the actual competition. I don’t think it is for everyone, I for example, hate competing and choke on the stage.
Matt: I competed in the Vienna WBC representing the United Arab Emirates and I agree with Kim, it’s the training, the preparation, the lengths you go to understanding your coffee and all the variables. I wasn’t happy with my actual performance, but it was definitely a valuable learning experience. While we support our guys to compete, we also give them space to select their own coffees, design their own routines and signature drinks, it has to come from them and be their personality.
Will you start any new projects in the future?
Kim & Matt: We have a lot coming up that we have been working on for a while now. We are launching a new sub-brand to offer limited edition micro lots, so we have just received our first eleven new coffees. We have finished the new logo, packaging design and soon, the new website will be completed, so keep an eye out on our Raw Coffee Company Facebook page to see when we come online. We are launching an app which is designed to bring the barista out closer to the consumer, to create a buzz around being a barista and to cross market and promote the cafes that are working with us. We want to see the baristas more recognized and feel this will help to see the quality of coffee genuinely improve and to create more of an authentic coffee community. In conjunction with that, both Matt and I have just finished our SCAE Diplomas, and Drew, our Ops Manager who is also an AST, has designed the best training manuals we have seen, so we are looking at growing and increasing the training we offer to our team, our customers and interested consumers. We have just finished building our first food truck; it is a 32 foot Chevy truck and fitted out it with a double station 3gr La Marzocco station with Mythos grinders, capable of pumping out very large volumes of coffee. Next, we are building a couple of tuktuks and looking for a medium size coffee truck that can fit into events where the big truck doesn’t fit. These mobile solutions are a fantastic way to market our coffee and for us all to have some fun out and about.
In the end, tell us some wisdom words for our coffee lovers’ community?
Kim: As I mentioned early, I can’t believe I had the kahuna’s to even start in the coffee industry, but that was ignorance about how much was involved. Now, I like to think, 9 years into it, about all the people I have met around the world, who I now call friends, about all the things still to learn and about all that amazing coffee out there. As a roaster, I am forever hoping we know enough, to be able to capture the most potential out of our coffee to be able to hand it on to our baristas and that they in turn are able to complete that chain… so many hands and so many variables to control.
Matt: Ignore the haters, put your head down and focus on the coffee. Ignore the politics and the critics; concentrate on learning, doing everything you can to understand your coffee and the processes. If you are not good at one element of the business, employ someone who is better than you and empower them. And have fun!
