Milano începe să câştige teren când vine vorba despre cafeaua specialty la nivel mondial. În curând, oraşul nu va mai figura doar pe lista iubitorilor de modă, ci şi pe cea a iubitorilor de cafea din al treilea val. Există speranţă… Un pas important în această privinţă este cafeneaua/restaurantul numit Taglio. De la deschiderea din octombrie anul trecut, toată lumea a muncit din greu pentru a oferi consumatorului o experienţă care merită. După cum spune Raffaele Sangiovani: „al treilea val este aici” şi nu e cale de întoarcere. Fost angajat la MTV, lui Raffaele îi place să glumească despre schimbarea sa profesională: „Taglio-pentru că vorbim despre o întrerupere a vieţii mele de dinainte”. Este un om ce se bucură de cele mai bune lucruri ale vieţii, fie că e vorba despre mâncare, vin sau cafea excelentă. Cea mai bună parte este că a hotărât să împărtăşească tot ce iubeşte cu noi. Cafeaua verde provine de la Falcon, un comerciant din UK ce s-a potrivit perfect cu prăjitorul Matteo Pavoni. Rafa şi Matteo au conceput un roast mai dark pentru consumatorii italieni ca blend al casei (Nicaragua şi Brazilia), ilar denumit „Păun”. Dar au opţiuni pentru toate gusturile.
Cum Italia se mândreşte cu lunga sa istorie a espressoului nu e de mirare că acesta se poate comanda cu uşurinţă la un preţ sub doi euro. Sunt mai multe alternative, inclusiv I Filtrati Columbia/Yrgacheffe (4/5 euro). De obicei, puteţi alege între două tipuri de cafea procesată natural şi una washed, în funcţie de preferinţe. Am încercat Ethiopia Yrgacheffe cu gust bogat, dulcea Rosebud (2.50 euro), puţin mai acida Delirio (1.50 euro) şi favorita casei, Peacock.

Milan is slowly beginning to gain firm ground when it comes to specialty coffee worldwide. Soon enough, this city will prove to be not only a bucket list destination for the fashion addict, but also one for the 3rd wave coffee aficionados out there. One can only hope.
A good step in this direction is the café/ restaurant named Taglio. Since its doors opened, in October last year, everyone has been working really hard in order to bring the average consumer an experience worth having. As owner Raffaele Sangiovani puts it: “the third wave is here” and there’s no turning back.
Former MTV employee, Raffaele likes to joke about his career change: “Taglio – because we’re talking about a cut from my previous life”. He is a man who enjoys life’s finest – be it food, wine or really good coffee. The best part is that he decided to share everything he loves with us. The green coffee comes from Falcon, an UK fair trader which proved to be a perfect fit for in house roaster Matteo Pavoni. Rafa and Matteo created a slightly darker roast for the Italian consumer in the form of the house blend (Nicaragua & Brazil), humorously named Peacock . But there are options for all tastes.
As Italy prides itself with having a long history with espresso, it’s no wonder just how easily you’ll find you can order one for under 2 euros. There are actually several alternatives, including I Filtrati Columbia/ Yrgacheffe (4/ 5 euros). You can usually choose from two types of naturally processed coffees and one washed, depending on your preference. I tried the full bodied Ethiopia Yrgacheffe, the sweeter Rosebud (2.50 euros), the more acidy Delirio (1.50 euros) and the house favorite, Peacock.
