Care sunt primele 3 calități necesare unui barista pentru a deveni excepțional?
Bucurați-vă de împărtășirea și experimentarea cafelei alături de alții. Concentrați-vă pe detalii și vizualizați imaginea de ansamblu. Etica muncii.

Spune-ne un pic despre proiectele tale cu cafea.
Sunt norocos să fiu implicat într-o varietate de proiecte. Epicentrul este într-adevăr cafeaua noastră numită Colonna and Small’s din Bath, Anglia. Au trecut 8 ani, iar competițiile, cercetările și cărțile au venit de acolo. Prăjitoria care împlinește 3 ani este chiar in afara Bath, într-un loc numit Yate, care este aproape de Bristol. De asemenea, am lansat un proiect intitulat „Peak Water”, unde ideea este de a obține o tehnologie calitativă de filtrare a cafelei, care să nu fie una mediocră.

Spune-ne despre noul tău hobby cu ridicarea greutăților. Vrei să concurezi?
Ha, ha! Am încetat să intru în competiții barista și deși obișnuiam să-mi spun că nu sunt atât de competitiv, pe cine păcălesc! Sunt foarte competitiv. Mereu am intrat în sala de gimnastică, dar mi-a plăcut să ridic greutăți. Am câștigat prima mea competiție regională și am ajuns la naționalele care sunt în câteva săptămâni! Voi face tot posibilul pentru a concura la cel mai înalt nivel, dar în acelasi timp este hobby-ul meu și echilibrul în cariera mea profesională în cafea, iar cafeaua e pe primul loc pentru mine :). Din punct de vedere al concursului este frumos deoarece nu are zonele gri pe care le au competițiile barista. În competitiile de cafea opinia va exista întotdeauna și opinia variază, interpretarea variază, etc.

What are the top 3 qualities a barista needs to become exceptional?
Enjoying sharing and experiencing coffee with others. A focus on the details and seeing the bigger picture. Work ethic.

Tell us a little bit about your projects with coffee.
I am lucky to be involved in a variety of projects. The epicenter is really our coffee shop called Colonna and Small’s in Bath, England. That’s been going for 8 years and the competitions and the research and books have all come from there really. The roastery that’s coming up to 3 years old is just outside of Bath in a place called Yate which is close to Bristol. We also just launched a project called Peak Water, where the idea is to get coffee quality filtration technology not a counter top filter jug.

Tell us about your new hobby with lifting weights. Are you planning to compete?
Ha ha! I stopped entering barista competitions, and although I used to tell myself I am not that competitive, who am I kidding! I am very competitive. I always dabbled in the gym, but got hooked on powerlifting. I did my first regional competition and got through to nationals which are in a few weeks! I will do my best to compete at the highest level, but at the same time it’s my hobby and balance to my professional career in coffee and coffee does come first for me:). From a competing point of view, it is nice as it doesn’t have the grey areas barista competitions have. In barista comps it will always be opinion and opinion varies and interpretation varies etc. In powerlifting you either lift the weight or you don’t. So, it’s simpler in that way.
