Povesteşte-ne despre cum te-ai decis să pui bazele proiectului FABB.
S-a întâmplat după ce am trăit experienţa prăjirii cafelei cu Pietro, din pasiune pentru munca visurilor mele. Am decis să îmi schimb afacerea de la un restaurant fine-dining la o micro prăjitorie şi cafenea. Când oamenii vedeau afacerea noastră cu maşini de prăjire, mulţi întrebau despre training, despre cursuri de barista şi prăjire.
Am văzut oportunitatea şi cererea de pe piaţă. Am decis să deschidem un centru pentru educaţie în cafea, echipat complet cu maşini profesionale. Am conceput şcoala astfel încât să aibă toate facilităţile pentru elevi, ca ei să se simtă confortabil şi să fie satisfăcuţi.
Care este părerea ta despre comunitatea de cafea din Thailanda?
Acum 6 ani, eram prima şcoală de cafea, eu eram prima AST certificată SCAE în Thailanda când am decis să deschidem Academia de Cafea FABB. A fost foarte dificil să schimbăm atitudinea de modă veche a oamenilor, atât a consumatorilor, cât şi a comercianţilor. A durat patru ani să înceapă revoluţia educaţiei în cafea în ţara noastră. Dar am fost atât de fericită în aceşti 3 ani şi astăzi văd că ceva se schimbă.
Oamenii din Thailanda înţeleg cafeaua specialty, studiază şi cercetează pentru a îndeplini standardele globale. Sunt sigur că vom avea un viitor strălucit în cafea.
Tell us about how did you decide to start the FABB project.
It was after I have experienced roasting with Pietro, with full passion of my dream work. I decided to turn my business from a fine-dining restaurant to micro roaster coffee shop.
When people saw our business with roaster machines,
many of them asked about training, both barista & roasting courses.
I saw this opportunity and demand in our market. We decided to open a coffee education center with fully equipped professional machines. I designed my school so it could provide facilities for students, to make them comfortable and fulfill their needs.
What’s your opinion about the coffee community in Thailand?
Throw back 6 years ago, we were the first coffee school, I was the first SCAE AST in Thailand when we decided opening FABB Academy of Coffee. It was very difficult to change the people’s attitude of their old fashion, both consumers & traders. It took 4 years to start the revolution of coffee education in our country. But I have been so happy during these 3 years and today I see something changing.
Thai people understand specialty coffee, they are studying and doing some research to meet the global standard. I am sure that we will have a great future in coffee.
