Sigur, nu voi avea aceeași consecvență, dar pot prăji, nu sunt dependent de ecran, știu cum ar trebui să miroasă boabele la 8,5 minute sau la 11 minute – pot simți când se va auzi prima crăpătura de boabă !
După patru ani de muncă la Neuteboom am plecat și am decis să-mi creez propriul meu spațiu, dar să fac o etichetă privată pe o scară mică și, prin urmare, să o livrez direct barurilor și restaurantelor interesate. Ce se întâmplă într-o mulțime de locuri în Olanda este faptul că oamenii creează și sunt foarte mândri de propriul lor brand, fie că este vorba despre bere, vin sau băutură, de ce să nu aibă propria lor cafea ?! Este atât de ușor – și așa a început totul.
Am decis să prăjesc boabele de cafea așa cum cred eu și să îmi vând cafeaua la un preț rezonabil. De la aceste noțiuni am început să-mi construiesc planul de afaceri, așa că am căutat în mod constant o cafea bună și prăjind-o, îmi place să gândesc, Spot On și apoi să îi fac pe ceilalți fericiți mulțumită unei cafele la un preț decent.
La prăjitoria mea fac atât arabica, cât și robusta. Cu toate acestea, am un profil de prăjire complet diferit pentru robusta, durează un pic mai mult, dar o prăjesc destul de ușor, astfel încât să pot dezvălui toată dulceața din ea. Bineînțeles că are ceva pământiu, o duritate și claritate, dar este un screen 18, deci cu mult mai puțin decât o robusta de 15. Aș putea să fac doar arabica, dar atunci aș rămâne cu o afacere mult mai mică. Există, de asemenea, câteva mici prăjitorii bune în oraș care livrează doar arabica. Acum am o robusta incredibilă din Indonezia pentru care au folosit o moară umedă ca parte a procesării.

What happens in a lot of places in Holland is that people create and are very proud of their own brand, whether it’s craft beer, wine or brew, why shouldn’t they have their own coffee as well?! It’s so easy – and so it all started.
I decided I’m going to roast the way I think the bean should be treated and sell my coffee at a reasonable price.
From these notions I started to build my business plan so I’m constantly looking for good coffee and roasting it, I like to think, Spot On , and then make other people happy thanks to a decently priced coffee.
At my roastery I do both Arabica and Robusta. However, I have a totally different roast profile for the Robusta, it takes a bit longer but I roast it quite light so I can reveal all the sweetness in it. Of course it has some earthiness, some rawness and sharpness, but it’s a screen 18 so a lot less than a 15 Robusta.
I could just do Arabica, but then I’d be left with a lot less business. There are also several good micro-roasters in town that just deliver Arabica. I currently have an incredible Robusta from Indonesia for which they used a wet mill as part of their processing. This washing of the coffee cherries gives the coffee beans unique flavours. Most people say “Robusta is bad”, I say it’s the way you treat it.
