Îmi aduc aminte când am început să lucrez cu cafea acum 14 ani și serios nimeni, absolut nimeni, nu cântărea cafeaua. Aveam râșnițe Mazzer și am aproximam totul după ochi – acum, lucrăm cu cântare încorporate și sisteme climatizate. Măsurăm TDS-ul în fiecare dimineață și discutăm despre diferențele dintre formele filtrelor de cafea. Dacă nu ar fi nebuni ca acești concurenți mondiali, cine ne-ar împinge să fim mai buni?
Nu cred însă că aceste competiții seamănă cu lumea cafelei de zi cu zi. Cu toate acestea, inovațiile din competiții au împins și au schimbat tehnologiile, teoriile și modul de a lucra. Având în vedere propria experiență, competițiile m-au ajutat în modul în care privesc și chestionez lucrurile. Experiența de a concura m-a determinat să doresc să merg mai departe și peste capacitățile mele actuale. Așadar, dacă mă pot folosi ca exemplu, da, concursurile de cafea ajută cu siguranță în educarea și schimbarea industriei cafelei.
Care este părerea ta cu privire la schimbările climatice și la toți hibrizii de cafea, crezi că gustul va fi afectat în viitor?
Anul acesta a fost primul an în care am putut consuma o mulțime de hibrizi noi, diferiți și vă pot spune că sunt foarte interesanți! Pe de altă parte, pentru prima dată în viața mea am trăit și simțit efectele încălzirii globale și schimbările climatice. M-am mutat în Australia chiar înainte de „vara neagră”, când practic tot sud-estul țării a ars timp de două luni consecutive. Erau atât de multe focuri și eram înconjurați pur și simplu de ele. A fost îngrozitor și nu pot să le spun decât asta oamenilor din Europa: este o realitate, se întâmplă și nu este deloc frumos.
However, the innovations from competitions have pushed and changed technologies, theories and the way we work. In my own experience, competitions have helped me with the way I look at and question things. Competition experience has made me want to go further and beyond my current capabilities; so if I can use myself as an example then yes, coffee competitions definitely help in educating and changing the coffee industry.
What is your opinion about climate change and all the coffee hybrids, do you think that taste will be affected in the future?
This year was the first year I could consume a lot of new different hybrids of coffees and I can tell you, it’s so freaking exciting! On the other hand, for the first time in my life I have also experienced the global warming and climate change effects.
I moved to Australia just before the ‘black summer’ of Australia, in which practically the entirety of the country’s south-east was on fire for two months. There were so many bushfires and we were surrounded by them. It was terrifying and I can only tell this to people in Europe: it’s true, it’s happening and it’s not pretty. Climate change is affecting the way we live and it is happening now so we all have to act ASAP. Right now I don’t think that we truly know what we are facing and whether hybrids are going to be a viable option for the future. We don’t know if they’ll outlast changes in climate, or if they will succumb to disease or become profitable enough. What we can do is educate people about realistic coffee prices, so that they stop buying very cheap coffee (that is one of the reasons why the Brazilian rainforest gets smaller and smaller each year).
